Body Soffritto is a combination of onion, carrot, and celery. In Italy, soffritto is finely diced, uniformly. But it is very similar to the French version, called mirepoix, which is often diced a bit larger. The threesome is also referred to as the holy trinity by some.

Body AUSTIN—Much of the state remains at considerable risk for wildfires through this week, largely because of higher-thanusual temperatures and drought conditions. More than 40% of the state is suffering extreme drought conditions, according to the U.S. Drought Monitor.
