The recipe of the week comes from Tessa Stapp Rogers. She was born and raised in Lockney. Her parents are Randell and Virginia Stapp.
Tessa met he husband on a blind date. A friend set the two up on a blind date. Tessa and Jason got married in May 2008. The couple have three daughters 10-year-old Teagan, 8-year-old Scout and 5-year-old Remi.
Tessa is sharing a recipe, Chicken Chili. She grew up on it and recalls when her mother made this it was with so much love.
Tessa’s oldest daughter Teagan also requests this for her birthday meal.
1 boned boiled chicken
1-pint half & half
1 lb. Velveeta cheese
1 large diced onion
1-pint tomatoes juice
1 large can diced green chilies
Sauté onions and chilies in 1 stick of butter. Put all ingredients above in a big pot and then add more milk, maybe close to ½ gallon. Heat and serve with Fritos.
